Wishing you have a lovely spring day today, whether you're celebrating Easter, Passover, or just Spring Break with your families and loved ones.
As for me, some friends have graciously invited me to tag along for an Easter dinner, and I'm bringing my flourless chocolate cake (click on the hyperlink for the recipe) for dessert. One, it's yummy, and two it's FAQ friendly. (Note to those with egg allergies, this particular recipe can't be made without eggs since it's basically like a souffle, depended on egg whites. I have other cake recipes (click on the hyperlink for the recipe), where you can use an egg substitute, that will work fine. Just not this one.)
Because it's for guests (and because I burnt it a bit on one side), I dusted the top with powdered sugar and a few chocolate shavings. Simple, easy, scrumptious. Someone is bringing ice cream for those who can have dairy, I usually bring Cool Whip for me (which is mostly corn syrup with a touch of sodium caseinate/dairy). I saw a recipe the other day for making "whipped cream" out of coconut cream, but haven't had a chance to try it. It's on my list.
